Feeling Nostalgic


I just read over 200 hundred letters, okay, maybe a bit less. Exaggerating sometimes makes things more interesting. Well the point is, I found all of the letters my husband and I wrote to each other during the beginning of our relationship. It was really interesting to read our developing feelings - from platonic friends, to dating, to being in a serious relationship and to finally being married. It was so lovely, romantic, and intense.
After 16 years of knowing each other, we have lost some of the romance, but we are definitely still intense. Sometimes arguing about everyday things can get intense, man. Boy, we need to liven things up a bit. I thought we were romatic, but after reading our old love letters, we need some help. I can't believe we've made it this far. It was tough for us at times. We married young and being a military family wasn't always easy. However, we are still standing strong. As much as we sometimes get on each others nerves :) we love each other. He knows I have his back and I know he has mine.

Oh NO!!!!

So once the kids were gone, I decided, on a whim, to take down my Christmas decor from the porch. In my raggedy sweatshirt and pajama pants I went to the porch and began to pull things down. I was in the middle of pulling off a red ribbon when I heard, SLAM! I turned around and noticed that the wind had blown my door shut. No big deal, I never lock the door handle. I continued to work and then when my hands were full, I decided to make a run to the basement and drop some decorations into my Christmas bin. I turn the knob and it was LOCKED! My heart began to race, but I talked myself into remaining calm. I walk to my garage, punch in the code and voila my garage door opened. I smiled and thought that I was a genius. However, when I went to go into my family room, that door was locked! Dead bolted!!! Now I was starting to panic. It's only 39 degrees, I am bare footed and in my raggedy house attire. Then I remembered that my stove was on! I had put a pan with some water and soap on the burner b/c it's a neat trick to get stubborn gook off of pans. Now I was in survival mode! My house is going to burn down! I am the wife of a fire fighter, for crying out loud!!!! I can just hear the five o'clock news, "the home of a local fire fighter burned down by his wife while he is away serving our country..." The New Yorker in me kicked in. Good thing I grew up being street smart. I looked around my garage and realized that my van was unlocked. I open up the little drawer in the console, where I keep our summer pool passes, and grabbed two of them. I ran to my front door and slid it through the lock, jiggled a little, and voila. I opened my door! Now I am on my way to Home Depot. We are buying a new handle lock! The dead bolt does it's job, but the one on the handle... well, you know! So, far that has been my morning!

My health

Many of you know, that I have been dealing with health issues on and off, for the past three years (maybe more). I am so sick of being told that I am young and "look healthy." Dang it, there is something wrong with me, why can't they find it? It's not normal to throw up after most of your meals, nor is it normal to have severe abdominal pain, debilitating hand swelling, headaches, and always feeling like you are on the verge of passing out. I have decided that I will cure myself. Yes, that is right! I have faith that with the right holistic foods, herbs, and exercise I can cure myself. I am planning on documenting everything I do, on a separate blog. Wish me luck. Today I embark a new journey, to wellness!

Homemade Vanilla Pudding


As promised here is my pudding recipe:

I actually got this one from a recipe website and liked it so much, that I stopped using my old recipe.

Ingredients

  • 2 1/2 cups milk, divided
  • Pinch salt
  • 1/2 cup sugar
  • 3 tablespoons cornstarch
  • 2 egg yolks
  • 1 teaspoon vanilla extract
  • 1 tablespoon butter or margarine

Directions

  1. Place 2 cups milk and salt in a saucepan. Sprinkle sugar on milk and do no stir; heat over medium-high. Quickly combine cornstarch with remaining milk; add egg yolks and mix well. When milk comes to a full boil, remove saucepan from the heat and stir in cornstarch mixture. Pudding will begin to thicken. Return to the heat and cook for 1 minute. Remove from the heat; stir in vanilla and butter. Pour into individual dishes.
*Make sure that when storing pudding you cover it with plastic wrap directly on top of pudding to avoid getting that yucky (film) layer.

Berry Cheesecake Parfaits


I had a bunch of frozen berries and didn't know what to do with them and when I ran into this recipe, I knew I had to try it! It turned out delish!

Prep Time: 15 Minutes
Makes 8 Servings



Ingredients
:
  • 1 pk 8 oz cream cheese
  • my own vanilla recipe (will be posting) or you can use packaged kind
  • 1 1/2 cups of whipping cream or Cool Whip (divided)
  • 24 Vanilla wafers, coarsely chopped.
  • 1 1/2 cups seasonal berries
Beat cream cheese with mixer until creamy. Gradually beat in pudding. Whisk in 1 cup of whipping cream / Cool Whip.
Layer wafers, berries, and pudding mixture in 8 parfait glasses. Repeat until all ingredients are done.
Top off w/ a dollop of the remanding whipping cream / Cool Whip.
